I hope you’re all doing well and ready to catch up on what’s been happening in my life. I’ve decided to start these Monday Morning Catch-Up blog posts so we can connect on a more personal level. Sure, my recipes are the star of the show, but I want you to get to know the real me too!

You have been wonderful, loyal readers and after last Monday’s post, I want to continue to connect and share who I am with you so you know the person behind the food.

So, on Monday mornings I’m going to write a post to just catch up and let you know what’s happening – just in case you’d like to know! 🙂

As some of you may know, I’m originally a Jersey Girl, but fate had other plans for me. Fifteen years ago, I fell head over heels for an Englishman, and we embarked on a whirlwind romance that led me to the UK. We’ve had an amazing life together, and our pride and joy is our incredible 10-year-old son.

Life took an unexpected turn when our little boy was diagnosed with High Functioning Autism Disorder, also known as Aspergers or ASD. It was a tough pill to swallow, and it changed everything for us. As parents, we had to navigate uncharted waters, facing challenges we never anticipated. But it’s been a journey of growth and understanding, and we’ve learned so much along the way.

A pivotal moment came during a visit to NJ in the Summer of 2017. It was heartwarming to see our son thriving in that familiar environment. He connected with people, smiled, and engaged in conversations like never before. It was truly a sight to behold. For a child who usually tries to shield his emotions, it was overwhelming to see him feeling so comfortable and at ease with others.

That visit made us realize that we needed to make a big decision – to move back home for good. Life in England had its challenges, and I often felt isolated with limited social interactions. Working from home has its perks, but it also meant having little opportunity to connect with others. Plus, no family around meant no babysitter or date nights – not an easy situation for any parent!

The idea of going back home, where family and dear friends reside, seemed like the right choice. We need their support as we continue this journey with our boy, and let’s be honest, a helping hand with babysitting is always a bonus! So, in just three short months, we’ll be making the big move – going home!

But before that, we have one major hurdle to overcome – my husband’s green card interview. I can’t even begin to describe how nervous I am about it! This interview is the only thing standing in the way of our new adventure, and I’m sending all the good vibes and crossed fingers I can muster. Wish us luck, guys!

I’m excited about what lies ahead and to share this journey with all of you. Life may throw us curveballs, but it’s the love and support we get from our dear ones and our extended family of readers that keep us going strong.

So, there you have it – a little glimpse into my world. Thank you for being such wonderful and loyal readers. I appreciate every one of you. Stay tuned for more updates and stories from the heart. Until next time! 😊

    Thank you for sharing your story. I too have a 13 year old with ADHD and anxiety – similar diagnosis. His diagnosis can isolate you as well. Hoping you have made a smooth transition and things are going well.

    Hey Erren. Now catching up on you after hearing you on the podcast. Thanks for sharing.

    I too am a transplant (I’m in the US now but from Trinidad and Tobago) with not much friends and family here with me. It is definitely tough. And I have a toddler.. lol. Growing pains of a first baby and no help has had me hollering in corners Lol. I fully understand the no babysitter/date night situation.

      Hi Renz, you have my sympathy! It gets easier when they start school. Make sure you have lunch dates when that happens. Until then- make the best of a bad situation once the kids go to bed. Have date night at home!! Thanks so much for touching base! Keep in touch!
