There are plenty of onion dip recipes out there, but I wanted one that tasted like the very best version of classic onion dip—rich, creamy, and loaded with deeply caramelized onions instead of relying on dried onion soup mix. The trick is giving the onions time to become soft, sweet, and almost jam-like. A tiny pinch of baking soda speeds up the caramelization without sacrificing flavor, while a combination of sour cream and Greek yogurt keeps the dip rich but not overly heavy. I also added fresh herbs and a splash of Worcestershire sauce for extra depth that makes every bite taste homemade. It’s one of those recipes that’s even better after a night in the refrigerator, making it perfect for parties, holidays, or simply keeping on hand for snacking.

Step By Step Instructions

Cook the Onions Until Tender

Add the sliced onions to a large nonstick skillet with ¼ cup of the water, the oil, and salt. Bring to a boil over high heat, then cover the pan. Cook for about 10 minutes, or until the water has completely evaporated. At this point, the onions should be very soft and starting to sizzle in the oil rather than simmer in water.

Caramelize Until Deep Golden Brown

Remove the lid and reduce the heat to medium-high. Spread the onions into an even layer and press them against the bottom of the pan with a rubber spatula. Let them cook undisturbed for about 30 seconds, then stir and scrape up the browned bits. Repeat this process for 15 to 20 minutes, until the onions are deeply golden brown, very soft, and almost jammy. If they start scorching rather than browning, lower the heat slightly.

Finish and Cool the Caramelized Onions

Mix the baking soda with the remaining tablespoon of water, then stir it into the onions. Keep stirring for about 1 minute, until the liquid has evaporated and the onions become even softer and more deeply browned. Transfer them to a bowl and let them cool completely. Once cool, finely chop them—you should have about ⅔ cup.

Whisk Together the Creamy Base

Add the sour cream, Greek yogurt, Worcestershire sauce, white vinegar, salt, and a few grinds of black pepper to a medium bowl. Whisk until completely smooth and evenly combined. Give it a quick taste at this stage; it should be creamy and tangy with a savory edge, but remember the onions will add plenty of sweetness and depth.

  • 1 pound yellow onions (about 2 medium, halved and sliced ¼-inch thick through the root)
  • ¼ cup plus 1 tablespoon water
  • 2 teaspoons neutral oil
  • ¼ teaspoon kosher salt
  • Pinch baking soda
For the Dip
  • 1 cup sour cream
  • ⅓ cup plain Greek yogurt (low-fat )
  • 1 tablespoon finely chopped fresh chives
  • 1 tablespoon finely chopped fresh parsley
  • ½ teaspoon white vinegar
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon kosher salt (plus more to taste)
  • Freshly ground black pepper

Instructions

  • Combine the sliced onions, water, oil, and salt in a large nonstick skillet. Set the pan over high heat and bring everything to a boil. Cover and cook until the water has completely evaporated and the onions begin to fry in the oil, about 10 minutes.
  • Remove the lid and lower the heat to medium-high. Spread the onions into an even layer, pressing them against the bottom of the pan with a rubber spatula. Let them cook undisturbed for about 30 seconds, then stir and scrape up any browned bits. Continue repeating this process of pressing, browning, and stirring until the onions are very soft, richly caramelized, and jammy, about 15 to 20 minutes.
  • Mix the baking soda with the remaining tablespoon of water and pour it into the skillet. Stir continuously for about 1 minute, until the liquid has cooked away. Transfer the onions to a bowl and allow them to cool completely before using.
  • Once cooled, finely chop the caramelized onions.
  • In a medium bowl, whisk together the sour cream, Greek yogurt, Worcestershire sauce, white vinegar, salt, and a few grinds of black pepper until smooth. Fold in the chopped onions, chives, and parsley until evenly combined.
  • Cover the dip and refrigerate for at least 1 hour before serving so the flavors have time to blend. Give it a final stir, then taste and adjust the seasoning with additional salt, pepper, vinegar, or Worcestershire sauce if needed.
