What I love about this cobbler is the contrast. The berries bake down into a thick, jammy filling with just enough lemon to keep all that sweetness bright, while the vanilla rounds everything out without taking over.

Then there’s the topping. Using heavy cream and melted butter gives you a biscuit that’s rich and tender inside but still gets beautifully golden on top. And that little sprinkle of coarse sugar? Don’t skip it—it gives the biscuits the best crisp finish.

I also leave gaps between the scoops of dough on purpose. It gives the berries somewhere to bubble up and helps the biscuits bake through instead of sitting like one heavy layer across the fruit. The result is exactly what I want from a cobbler: juicy underneath, fluffy on top, with plenty of those buttery, crisp edges.

Combine the berries, sugar, cornstarch, lemon juice, vanilla, and salt in a large bowl until every berry is evenly coated. Transfer the mixture to a 9×13-inch baking dish and spread it into an even layer.

Whisk together the flour, sugar, baking powder, baking soda, and salt. Stir the heavy cream, melted butter, and vanilla together, then pour the wet mixture into the dry ingredients. Mix just until a soft, thick dough forms.
