Step By Step Instructions

Prepare the Vegetables

Cut all of the vegetables into similar-sized pieces, toss them with olive oil, oregano, salt, and pepper, then spread them into a single layer on a large sheet pan.

Roast the Garlic

Trim the top from a whole head of garlic, drizzle with olive oil, wrap loosely in foil, and place it on the pan beside the vegetables.

Roast Until Caramelized

Roast at 425°F, stirring the vegetables halfway through, until they’re tender with browned edges and the tomatoes have just started to burst.

Ingredients

  • 2 medium zucchini (cut into thick half-moons)
  • 2 yellow squash (cut into thick half-moons)
  • 1 red bell pepper (cut into chunks)
  • 1 yellow bell pepper (cut into chunks)
  • 1 red onion (cut into wedges)
  • 8 oz cremini mushrooms (halved)
  • 1 pint cherry tomatoes
  • 1 whole head garlic
  • 3 tablespoons olive oil (divided)
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 tablespoon fresh parsley (chopped)
  • 1 teaspoon fresh thyme leaves ((or ½ teaspoon dried))
  • 1 tablespoon fresh lemon juice

Instructions

  • Preheat the oven to 425°F (220°C). Add the zucchini, yellow squash, bell peppers, red onion, mushrooms, and cherry tomatoes to a large bowl. Drizzle with 2 tablespoons of olive oil and season with the salt, pepper, and oregano. Toss until evenly coated.
  • Remove any loose papery layers from the outside of the garlic head, leaving the cloves intact. Using a sharp knife, slice about ½ inch (1cm) off the top of the garlic head to expose the tops of the cloves. Place the garlic on a small piece of foil, drizzle with the remaining tablespoon of olive oil, and wrap loosely.
  • Spread the vegetables onto a large sheet pan in an even layer. Place the wrapped garlic on the pan alongside the vegetables. Roast for 30 to 35 minutes, stirring the vegetables halfway through cooking, until tender and lightly caramelized. The garlic should be soft and golden.
  • Carefully unwrap the garlic and allow it to cool slightly. Squeeze the softened garlic cloves from their skins into a small bowl. Mash with a fork until smooth. Stir in the lemon juice, parsley, and thyme.
  • Transfer the roasted vegetables to a serving bowl. Add the mashed garlic mixture and toss gently until everything is evenly coated. Taste and adjust seasoning if needed. Serve warm.

Tips

Erren’s Top Tips

  • Give the vegetables plenty of room on the sheet pan so they roast instead of steam.
  • Cut firmer vegetables slightly smaller than softer ones so everything finishes cooking at the same time.
  • Roast the garlic alongside the vegetables so everything finishes together.
  • Wait until after roasting to add the fresh herbs and lemon juice for the brightest flavor.
  • If your vegetables seem crowded, divide them between two sheet pans for even better caramelization.

Variations & Add-Ins

  • Add cubes of eggplant for an even heartier Mediterranean-style side.
  • Toss with cooked orzo or couscous to turn it into a light vegetarian meal.
  • Sprinkle with crumbled feta, goat cheese, or freshly grated Parmesan before serving.
  • Finish with toasted pine nuts or sliced almonds for added crunch.
  • Drizzle with balsamic glaze for a touch of sweetness.
  • Stir in fresh basil just before serving.

Storage & Freezing

  • Storage: Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • Reheating: Reheat in a 400°F oven for about 10 minutes or warm in a skillet until heated through. Microwaving works but softens the vegetables.
  • Freezing: Freeze for up to 2 months. The vegetables will be softer after thawing but are still excellent in pasta, grain bowls, soups, or frittatas.

Overcrowding the pan traps steam. Spread the vegetables into a single layer with space between them so moisture can evaporate and the vegetables caramelize.
