Easy Cherry Tomato Sauce
This easy, fresh pasta sauce with cherry tomatoes is a vibrant and deliciously healthy dish. This simple dish is perfect for busy weeknight dinners.

- 2 tbsp olive oil
- 1 pound cherry tomatoes the riper the better!
- 3 garlic cloves crushed & peeled
- a big handful fresh basil leaves torn small pieces
- salt and pepper to taste
- 1-2 teaspoons of sugar optional
Heat the oil on medium heat in a large, non-stick frying pan.
Add the garlic and cook for 1 minute.
Lower the heat to low, and add the tomatoes, season well.
Cover the pan and cook for about 20 minutes, or until the tomatoes are soft and break down.
Remove from heat and using a large slotted spoon, scoop out one spoonful of the whole tomatoes and set aside.
Add the remaining tomato mixture to a blender or food processor and puree (after pureeing if there is too much skin or seeds for your liking you can strain the sauce at this point into a bowl).
Return the sauce to the pan, add the whole tomatoes, basil and salt, and pepper to taste.
If the sauce tastes high in acid, you can add the sugar at this point and then cook for 3-5 minutes on low heat just to dissolve the sugar.
Serve on pasta or dish of your choice.
